Marinated Artichoke Hearts

 

Ingredients

1 can whole artichoke hearts

1 tablespoon of chopped parsley

3 cloves garlic minced

1/4 teaspoon of crushed red pepper

1/2 cup olive oil

1/4 cup red wine vinegar

salt & pepper to taste

Prep

Drain the can of artichokes.  Cut artichokes in 1/2 or 1/4 (to your liking).  Add olive oil, red wine vinegar, minced garlic, chopped parsely, salt & pepper.  Toss together. Let marinate overnight.  Perfect for side dish or on top of salad.
