Grilled Eggplant & Tomatoes with Burrata

Ingredients
Eggplants
Tomatoes
Olive Oil
Parmesan Cheese
Salt & Pepper
fesh basil

Prep
Slice eggplants. Brush with olive oil and sprinkle with salt & pepper. Place on Hot Grill on high for 2-3 minutes per side. Get the char marks. Set aside drizzle with olive oil and season with more salt and pepper to taste.
Slice tomatoes. Brush with olive oil. Place on high heat on hot grill. Flip after 1 minutes. Place tomatoes over sliced/grilled eggplant. Plate and serve with fresh burrata. Add some frest basil.
