Lentil Soup

Can be Vegetarian if You Wish

Ingredients

Olive oil
1 medium onion small dice
2 lg carrots small dice
3 celery stalks small dice
3 cloves garlic crushed
1 lb dried lentils
2 ham steaks cut into cubes*
2 cups water
48 oz low fat chicken broth* ( or vegetable broth)
Salt
Pepper
Tobasco Sauce

Prep
Saute Onion, Celery, Carrots, and garlic in olive oil. When onion is translucent add lentils and cook for 3-4 minutes, add diced ham and cook for 2-3 minutes. Add water and broth. Bring to a boil, then turn down the heat and simmer for 45 mins. Add Salt & Pepper to taste. If you like a little heat add a couple of drops of Tobasco Sauce

*Skip Ham and Use Vegetable Broth to make it VEGETARIAN
