Strawberry, Radish, and Walnut Salad

 

Ingredients

4-6 cups arugula

1 cup walnuts chopped

1 pint strawberries cleaned and sliced

1  bunch of radishes cleaned and sliced thin

1/4- 1/2 cup crumbled gorgonzola cheese

salt

pepper

1/2 cup of greek yogurt

1/4 balsamic vinegar

Prep

In a large bowl  place cleaned and dired arugula. Layer sliced strawberries, sliced radishes, walnuts, and gorgonzola cheese on top.  To make the dressing add  3-4 strawberries to 1/2 cup of yogurt, add some salt and pepper to taste.  Add 1/4 cup of balsamic vinegar.  Blend well.  Set aside in fridge.  Dressing will last a day or two.  It tends to get bitter the longer it stays.  So use it immediately.
