Lamb Meatballs with Sautéed Greens

Lamb Meatballs and sautéed Greens 

Gluten Free and Paleo

Super quick easy weeknight dinner

and kids love it!

Ingredients

1 lb of ground lamb (grass fed and hormone free)

5 cloves of garlic minced ( 3 for meatballs, 2 for saute)

½ teaspoon lemon zest

6 kalamata olives minced

½ teaspoon cinnamon

½ teaspoon sea salt

2 tablespoons of fresh chopped parsley

2 tablespoons coconut oil

½ cup beef broth or bone broth

1 lb of baby spinach or mixed greens

Salt  & Pepper to taste ( not necessary,,but j

Prep

In large bowl add 3 cloves of minced garlic, cinnamon, salt, lemon zest, parsley,  and olives to ground lamb . Mix and make into small little 1 inch meatballs. Set aside.  In large skillet or saute pan add coconut oil and two cloves of garlic.Saute.. Heat at medium high.  Add meatballs when coconut oil is hot. Saute and turn as they brown. When brown add beef broth and cover and simmer for 5-6 minutes.   Add spinach or greens until they wilt. Serve with greek salad and sweet potatoes
