Grilled Flounder with Basil and Tomatoes
Fresh squeezed lemon juice
3 cloves of garlic minced
1 cup of cherry or grape tomatoes (slice in half)
Fresh Basil ( chop or break apart)
Place flounder in foil packet. Add salt, pepper, garlic, and lemon juice to flounder. Season to your liking. Sprinkle a little lemon zest on top. Add handful of tomatoes and sprinkle a bit of basil in each packet. Top with a bit of butter. Close foil and place on Grill (medium heat).
Cook on grill with top closed for about 8-10 minutes. Until flakey. Plate and spoon juice, tomatoes, and basil on top of fish. Garnish with more fresh basil.
