Wheat Berry & Black Bean Salad

Wheat Berry Salad

Ingredients
• 1 cup wheat berries (or freekeh)
• 2 1/2 cups of chicken or vegetable stock
• 1 1/2 limes (juiced)
• 1/2 cup vegetable oil
• 2 tspn cumin
• 1/2 cup diced bell pepper ( any color)
• 1/2 cup diced red onion
• 1 bunch of cilantro chopped
• 1 can black beans (rinse)
• 1 can cannelloni beans (rinse)
• (lettuce optional)
Cook wheat berries
Let cool
Add chopped peppers & onions, beans, cilantro and dressing.
Toss.
Serve chilled. Optional to serve over chopped romaine lettuce.
Goes well with grilled meats (ribs, chicken)
Make on Sunday and have lunch for the week.

    Aside from my darn Gluten issues, this looks tasty! Miss you! I will try to cook something seasonal and available nationwide and send a picture this week. Not going to send something that is California only. 🙂
